Poor Mans Potatoes

Another lush dish from Martin Dorey for you guys, all dish’s are perfect for camper van cooking.

When I mentioned a little while ago to my friend Simon that I had discovered this traditional Spanish dish (it’s known as Patatas a lo Pobre) he announced very casually that he used to cook it all the time on surf trips in his T25 to the west coast of France. So, it’s a proven camper van favourite. This is the basic version but you can add all kinds of other lovely things to it like red peppers, herbs and perhaps even a smidge of cumin. YUM!

 

For 2

 

1 large onion

Olive oil (lots of it)

2 cloves of garlic, finely chopped

1 green pepper, cored and sliced

Bay leaf

4 large spuds, peeled and diced

2 large eggs, if you fancy

 

Gently fry the onion in at least 3 tablespoons of olive oil, in a frying pan, until soft. Next add the garlic, pepper and bay leaf and cook for 10 minutes over a low heat. Next, add the potatoes and some seasoning and follow this with enough olive oil, 4-5 tablespoons, to almost cover the potatoes. Cover the pan and simmer everything over a low heat for 15 minutes or until the potatoes are cooked and have begun to break up. Transfer to plates using a slotted spoon.

 

If you want to add eggs, make a couple of indentations in the mixture a few minutes before the end of the cooking time and break the eggs into them. Continue to cook until the eggs are cooked to your liking.
